Programs  BetraSalt™ - Novel Taste Substitute Technology

The Dietary Guidelines for Americans, 2005 published by the Department of Health and Human Services (DHHS) and the Department of Agriculture (USDA) recommend <2,300 mg of sodium per day, although the average American consumes >4,000 mg of sodium per day.  Reducing the intake of sodium can be beneficial in reducing the incidence of hypertension and heart attacks in a susceptible, mainly aging, population.  Current solutions for salt replacement have not fully succeeded in maintaining both the taste and functionality of sodium.  The best replacement for sodium chloride is potassium chloride, which is a reasonable functional substitute, except for its bitter and metallic taste.

BetraSalt is a new technology based on sound scientific principles that uses a combination of GRAS ingredients to mitigate the usual bitter taste of potassium chloride in sodium replacement applications.  Since BetraSalt incorporates several defined ingredients, its taste profile can be “tuned” for individual applications across a wide range of product types.

Key benefits of BetraSalt include:

·         Proprietary formulation of FEMA GRAS materials and potassium chloride – ready for market entry.

·          Mitigates the bitter and metallic taste of potassium.

·         Retains the functionality of sodium – can be used anywhere sodium is used (i.e. table salt, cooking, etc.).

·         Applications include: chicken soup, beef gravy, nacho flavor, vegetable juice, and as a tabletop salt.

·         Potassium chloride incorporation permits “Heart Healthy” product labeling.

BetraSalt is protected by 2 U.S. Patents (US#7,452,563 and US#6,540,978) and is available for licensing. An extensive evaluation and applications package is available for review.  For further information, contact Corporate Development at bd@redpointbio.com.
